A comforting and flavorful vegetarian curry from Myanmar, featuring Shan tofu (a chickpea flour-based tofu) simmered in a tomato and onion-based sauce with aromatic spices. This dish is a staple in Shan cuisine and is known for its simplicity and wholesome ingredients.

🧂 Ingredients
- 1.5 cups Shan tofu(cut into 1-inch cubes)
- 1 tbsp Olive oil
- 2 medium Red onions(sliced)
- 3 cloves Garlic(minced)
- 1 cup Tomatoes(diced)
- 1 tsp Turmeric powder
- 1 tbsp Chili powder
- 0.75 cups Water
- 1.5 tbsp Vegan fish sauce(or soy sauce)
- 3 small Green chilies(sliced (adjust to taste))
- 1 tsp Garam masala
- 2 sprigs Fresh coriander(chopped, for garnish)
👨🍳 Instructions
- 1
Prepare the Shan tofu by cutting it into 1-inch cubes. Dice the tomatoes, slice the red onions, and mince the garlic.
💡 Tip: Shan tofu is made from chickpea flour and is distinct from soy-based tofu. - 2
Heat 1 tbsp of olive oil in a medium saucepan over medium heat. Add the sliced red onions and sauté until translucent, about 5-7 minutes.
- 3
Add the minced garlic, diced tomatoes, turmeric powder, and chili powder to the saucepan. Stir well to combine and cook for 2-3 minutes until the tomatoes begin to soften.
- 4
Pour in the water and bring the mixture to a boil. Cover the saucepan and let it simmer until the tomatoes become mushy, about 5-7 minutes.
- 5
Add the vegan fish sauce (or soy sauce), sliced green chilies, and the cubed Shan tofu to the pot. Stir gently to mix. Reduce the heat to low and simmer for 1-2 minutes.
- 6
Stir in the garam masala and chopped fresh coriander. Mix gently until the coriander has just wilted.
💡 Tip: Avoid overcooking the tofu to prevent it from becoming too mushy. - 7
Serve the Burmese Shan Tofu Curry hot, garnished with extra fresh coriander, alongside steamed rice.
💡 Pro Tips
- ✓Adjust the chili powder and green chilies to control the spice level.
- ✓If Shan tofu is unavailable, firm regular tofu can be used as a substitute, though the texture will differ.
- ✓This curry is best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 2 days.
🔄 Variations
- Add other vegetables like peas, carrots, or bell peppers.
- For a richer flavor, a tablespoon of tomato paste can be added with the tomatoes.
