- 1 kg Chicken(cut into pieces)
- 150 g Cashew nuts(unsalted, raw)
- 2 medium Onions(finely chopped)
- 4 cloves Garlic(minced)
- 400 g Tomatoes(crushed or pureed)

- 3 tbsp Vegetable oil
- 500 ml Chicken broth
- 0.5 tsp Cayenne pepper(or to taste)
- 1 tsp Thyme(dried)
- 1 tsp Salt(or to taste)

- 2 tbsp Parsley(fresh, chopped for garnish)

Grind the cashew nuts into a fine powder using a spice grinder or food processor. Set aside.

Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onions and sautรฉ until softened, about 5-7 minutes.
