🧂 Ingredients

  • 4 medium Pita bread(cut into bite-sized pieces)
  • 2 cans (15 oz each) Chickpeas(drained and rinsed, or 3 cups cooked)
  • 1.5 cups Plain yogurt(full-fat recommended)
  • 1/2 cup Tahini
  • 3 cloves Garlic(minced)
  • 3 tbsp Lemon juice
  • 1/4 cup Olive oil(plus more for drizzling)
  • to taste Salt
  • 1/4 cup Water(or as needed to thin sauce)
  • 1/4 cup Pine nuts(toasted, for garnish (optional))
  • 2 tbsp Fresh parsley(chopped, for garnish (optional))

👨‍🍳 Instructions

  1. 1

Fry the pita bread pieces in a shallow layer of olive oil in a large skillet over medium-high heat until golden brown and crispy. Alternatively, toast them in the oven or a toaster oven until crisp. Drain on paper towels.

    ⏱️ 8-10 minutes
💡 Tip: Watch closely to prevent burning.
  2. 2

In a medium bowl, whisk together the yogurt, tahini, minced garlic, lemon juice, and 1/4 cup olive oil. Season with salt. Gradually whisk in water until the sauce reaches a pourable consistency.

  3. 3

Gently warm the drained chickpeas in a small saucepan or in the microwave. You can add a tablespoon of water or broth if heating on the stove.

    ⏱️ 3-5 minutes
  4. 4

To assemble, spread the crispy pita bread pieces in the bottom of a serving dish.

  5. 5

Spoon the warm chickpeas evenly over the pita bread.

  6. 6

Pour the tahini-yogurt sauce generously over the chickpeas and pita bread, ensuring it coats everything.

  7. 7

Drizzle with additional olive oil. Garnish with toasted pine nuts and chopped fresh parsley, if using.

💡 Tip: Toast pine nuts in a dry skillet over medium heat until fragrant and lightly golden.
  8. 8

Serve immediately while the pita is still somewhat crisp.

💡 Pro Tips

  • For a richer sauce, use labneh instead of or in addition to yogurt.
  • If you prefer a milder garlic flavor, you can lightly roast the garlic cloves before mincing.
  • Adjust the lemon juice and salt to your personal preference.

🔄 Variations

  • Add a layer of cooked fava beans along with the chickpeas.
  • Incorporate a pinch of sumac for a tangy, lemony flavor.
  • For a meat version, add shredded cooked chicken or lamb on top.
