Duruka in Coconut Cream

- 1 inch piece Ginger(grated)
- 0.5 tsp Turmeric powder
- 0.5 tsp Salt(or to taste)
- 1.5 cups Coconut milk(full-fat)
- 2 tbsp Fresh cilantro(chopped, for garnish)

Prepare the duruka by carefully removing the tough outer sheath and any fibrous parts. Cut the tender inner stalks into bite-sized pieces (about 2 inches long).

Heat coconut oil in a saucepan or pot over medium heat. Add the sliced onion and sautรฉ until softened and translucent, about 5 minutes.

Add the minced garlic, sliced chili, and grated ginger to the pot. Cook for 1-2 minutes until fragrant.

Stir in the turmeric powder and salt. Add the prepared duruka pieces and stir to coat them with the aromatics.

Pour in the coconut milk. Bring the mixture to a gentle simmer, then reduce the heat to low, cover the pot, and cook for 10-15 minutes, or until the duruka is tender but still has a slight bite. Avoid overcooking, as it can become mushy.
