Fijian Fried Breadfruit Pakora

- 1 tsp Coriander powder
- 1 tsp Salt(or to taste)
- Oil for frying(vegetable or canola oil)

Place the cubed breadfruit in a pot with enough water to cover. Add the turmeric powder and a pinch of salt. Bring to a boil and cook until the breadfruit is tender, about 15-20 minutes. Drain well and mash the breadfruit in a bowl until mostly smooth, leaving a few small chunks for texture.

In a separate bowl, whisk together the all-purpose flour, chickpea flour, rice flour, ginger-garlic paste, chopped green chilies, cumin seeds, coriander powder, and salt. Gradually add water, mixing until you have a thick, smooth batter that coats the back of a spoon. You may need to adjust the water quantity.

Add the mashed breadfruit to the batter and mix gently until well combined. Ensure the breadfruit is evenly coated.

Heat about 2-3 inches of oil in a deep pot or Dutch oven over medium-high heat to about 350ยฐF (175ยฐC). Test the oil by dropping a small amount of batter; it should sizzle immediately.

Carefully drop spoonfuls of the breadfruit batter into the hot oil, being careful not to overcrowd the pot. Fry in batches for 4-6 minutes, turning occasionally, until golden brown and crispy.
