- 1 lb Beets(about 2-3 medium beets, roasted or boiled until tender)
- 1/2 cup Walnuts(toasted)

- 1/4 cup Fresh cilantro(chopped)
- 2 tbsp Fresh parsley(chopped)
- 1 tbsp Lemon juice(or to taste)
- 2 tbsp Olive oil
- 1/2 tsp Salt(or to taste)
- 1/4 tsp Black pepper(freshly ground, or to taste)
- 2 tbsp Pomegranate seeds(for garnish (optional))

If using raw beets, wash them, wrap in foil, and roast at 375ยฐF (190ยฐC) for 60-90 minutes, or until tender. Alternatively, boil them until tender. Let cool, then peel and grate finely.

Toast the walnuts in a dry skillet over medium heat until fragrant, about 3-5 minutes. Let cool, then coarsely chop.

In a medium bowl, combine the grated beets, chopped walnuts, minced garlic, chopped cilantro, chopped parsley, lemon juice, and olive oil.

Season with salt and freshly ground black pepper to taste. Mix well to combine all ingredients.
