Potato and Leek Gratin

- 800 g Potatoes(peeled and thinly sliced (Yukon Gold or Russet recommended))
- 2 medium Leeks(washed and thinly sliced (white and light green parts only))
- 2 tbsp Butter
- 2 cloves Garlic cloves(minced)
- 2 tbsp All-purpose flour
- 1.5 cups Milk
- 1 cup Irish cheddar cheese(grated)

Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.

In a large skillet, melt 1 tbsp of butter over medium heat. Add the sliced leeks and minced garlic. Sauté until softened, about 5 minutes. Remove from heat and set aside.

In a medium saucepan, melt the remaining 1 tbsp of butter over medium heat. Stir in the flour and cook for 1-2 minutes, stirring constantly, to form a roux.

Gradually whisk in the milk until smooth. Bring to a simmer, stirring constantly, until the sauce thickens. Stir in half of the grated Irish cheddar cheese until melted and smooth. Season with salt and pepper to taste.

Arrange half of the sliced potatoes in an even layer in the prepared baking dish. Spread half of the sautéed leek mixture over the potatoes. Pour half of the cheese sauce over the leeks and potatoes.

Repeat the layers with the remaining potatoes, leeks, and cheese sauce. Sprinkle the remaining grated cheese over the top.

Cover the baking dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for another 10-15 minutes, or until the potatoes are tender and the top is golden brown and bubbly.
