- 3 tbsp Olive oil or neutral oil(for cooking)

- 0.33 cup Barberries or dried cranberries(optional)

Preheat oven to 375ยฐF (190ยฐC). Lightly grease a 9-inch round cake pan or an 8-inch square pan, or line with parchment paper.

In a large bowl, whisk together the eggs, flour, baking powder, turmeric, salt, and pepper until well combined.

Add the finely chopped herbs (parsley, cilantro, dill, scallions/leeks) to the egg mixture. If using, stir in the chopped walnuts and barberries/cranberries. Mix gently until everything is evenly distributed.

Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat. Pour the herb and egg mixture into the skillet and spread evenly. Cook on the stovetop for about 2-3 minutes, until the edges begin to set.
