🧂 Ingredients

  • 700 g Potatoes(peeled and chopped into 1-inch pieces)
  • 1 large Onion(diced)
  • 1 medium Red bell pepper(sliced thinly)
  • 2 small Tomatoes(diced)
  • 4 pieces Chicken thighs(bone-in, skin-on preferred)
  • 3 tbsp Vegeta seasoning
  • 3 tbsp Paprika (aleva paprika)
  • 1 tbsp Salt(or to taste)
  • 0.5 tsp Black pepper(or to taste)
  • 3 tbsp Sunflower oil
  • 1.5 L Water(or more)
  • 2 tbsp Parsley(chopped, for garnish (optional))
  • 1 large Egg(for dumplings)
  • 2.5 tbsp Flour(for dumplings)
  • 1 tbsp Oil(for dumplings)

    In a large soup pot, heat the sunflower oil over medium heat. Add the diced onion and chopped carrots. Sauté until the onions are translucent and carrots are softened, about 5-7 minutes.

    Add the diced tomatoes and sliced red bell pepper to the pot. Sauté for another 2-3 minutes until the vegetables are softened.

    Stir in the chopped potatoes, paprika, Vegeta seasoning, salt, and black pepper. Coat all the vegetables well with the spices.

    Add the chicken thighs to the pot and pour in the water. Bring the mixture to a boil, then reduce the heat to medium-low, cover partially, and simmer for 30 minutes, stirring occasionally.

    While the stew simmers, prepare the dumplings: In a small bowl, whisk together the egg, 1 tbsp oil, and 2.5 tbsp flour until a thick batter forms. If it's too runny, add a little more flour.

    After 30 minutes, check if the potatoes and chicken are cooked through. The potatoes should be tender but not falling apart. Taste the broth and adjust seasoning if needed.

    Using a teaspoon, drop small portions of the dumpling batter into the simmering stew. Dip the spoon in the broth after each dumpling to prevent sticking. Simmer for another 5-6 minutes until the dumplings are cooked through and have doubled in size.
