  • 1 kg Chicken thighs(boneless, skinless, cut into bite-sized pieces)
  • 2 large Onions(chopped)
  • 4 cloves Garlic(minced)
  • 2 medium Bell peppers(any color, chopped)
  • 2 medium Carrots(peeled and sliced)
  • 500 g Potatoes(peeled and cubed)
  • 400 g Tomatoes(canned diced, or fresh chopped)
  • 500 ml Vegetable broth
  • 2 tbsp Sweet paprika
  • 1 tsp Hot paprika(optional, adjust to taste)
  • 3 tbsp Vegetable oil
  • to taste Salt
  • to taste Black pepper
  • for garnish Fresh parsley(chopped)

    Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides. Remove chicken and set aside.
