Makoenya
Makoenya are a popular Lesotho treat, similar to doughnuts, made from a simple dough of flour, sugar, yeast, and water, then deep-fried until golden brown. They are often enjoyed plain or dusted with cinnamon sugar.

- 500 g All-purpose flour
- 50 g Granulated sugar
- 7 g Active dry yeast
- 250 ml Warm water
- 1 tsp Salt
- for frying Vegetable oil
- for dusting Cinnamon sugar(optional)

In a small bowl, combine warm water, sugar, and yeast. Let stand for 5-10 minutes until foamy.

In a large bowl, combine flour and salt. Pour in the yeast mixture and mix until a dough forms.

Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.

Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for about 1 hour, or until doubled in size.

Punch down the dough and roll it out to about 1/2 inch thickness. Cut into desired shapes (squares or circles).

Heat vegetable oil in a deep pan or pot over medium heat. The oil should be about 350ยฐF (175ยฐC).

Carefully fry the makoenya in batches for 2-3 minutes per side, until golden brown.

Remove from oil and drain on paper towels. Dust with cinnamon sugar while still warm, if desired.
