🧂 Ingredients

  • 1.5 kg Lamb shoulder(cut into large cubes)
  • 2 large Onions(chopped)
  • 4 cloves Garlic(minced)
  • 1 tablespoon Ginger(freshly grated)
  • 150 ml Honey
  • 100 g Raisins
  • 100 g Almonds(blanched and slivered)
  • 2 pieces Cinnamon sticks
  • 1 teaspoon Turmeric
  • 0.5 teaspoon Saffron threads(soaked in warm water)
  • 3 tablespoons Olive oil
  • 500 ml Water
  • to taste Salt
  • to taste Black pepper

    Heat olive oil in a tagine or heavy-bottomed pot over medium-high heat. Brown the lamb cubes on all sides.

    Remove lamb and set aside. Add chopped onions to the pot and sauté until softened, about 5-7 minutes.

    Add minced garlic and grated ginger, cooking for another minute until fragrant.

    Return the lamb to the pot. Add cinnamon sticks, turmeric, salt, and pepper. Pour in the water and bring to a simmer.

    💡 Tip: Ensure lamb is mostly submerged in liquid.

    Cover the pot and reduce heat to low. Simmer gently for 1.5 to 2 hours, or until the lamb is very tender.
