Spicy Fish and Okra Stew

- 3 tbsp Vegetable oil
- 1 large Onion(chopped)
- 3 large Garlic cloves(minced)
- 1 cm piece Fresh ginger(peeled and grated)
- 1 can (14.5 oz) Diced tomatoes(undrained)
- 1 tbsp Tomato paste
- 2 cups Fish stock or water
- 300 g Okra(fresh or frozen, trimmed and sliced)
- 1 tsp Paprika
- 0.5 tsp Chili powder(or to taste)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground, or to taste)
- 2 tbsp Fresh parsley(chopped, for garnish)

Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion and sautรฉ until softened, about 5 minutes.
