Malian Rice and Vegetable Stew

- 4 cups Vegetable broth
- 1 large Onion(chopped)
- 3 cloves Garlic(minced)
- 400 g Tomatoes(diced, canned or fresh)
- 2 medium Carrots(diced)
- 1 medium Sweet potatoes(peeled and diced)
- 1 Bell pepper(any color, chopped)
- 2 tbsp Tomato paste
- 1 tsp Cumin
- 1 tsp Coriander
- 1/2 tsp Turmeric
- 1/4 tsp Chili powder(or to taste)
- to taste Salt and black pepper
- 2 tbsp Vegetable oil
- for garnish Fresh cilantro or parsley(chopped)

Rinse the rice thoroughly under cold water until the water runs clear. Set aside.

Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
