Mauritian Sautéed Cabbage with Potatoes

🧂 Ingredients
- 0.5 large head Cabbage(shredded)
- 2 medium Potatoes(peeled and cut into 1/2-inch cubes)
- 1 medium Onion(thinly sliced)
- 3 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 1 medium Tomatoes(chopped)
- 1 tsp Thyme(dried, or 3-4 sprigs fresh)
- 0.5 tsp Mustard seeds
- 2 tbsp Vegetable oil
- 0.5 cup Water(or as needed)
- 1 tsp Salt(or to taste)

Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the sliced onion and cook until softened and translucent, about 2-3 minutes.

Add the minced garlic and grated ginger to the skillet and cook for another minute until fragrant.

Add the cubed potatoes to the skillet. Stir to coat with the aromatics. Add about 1/4 cup of water, cover, and cook for about 10-12 minutes, or until the potatoes are about 75% cooked. Stir occasionally and add a little more water if the pan becomes dry.

Add the shredded cabbage to the skillet. Stir to combine with the potatoes. Add the chopped tomatoes, dried thyme, and the remaining 1 tablespoon of vegetable oil.

Sprinkle the mustard seeds over the mixture. Add the remaining 1/4 cup of water, salt, and stir everything well. Cover the skillet and cook for another 10-15 minutes, or until the cabbage is tender and the potatoes are fully cooked.
