👨‍🍳 Instructions

  1. 1

Cook the egg noodles according to package instructions. Drain and set aside. In a small bowl, mix together soy sauce, oyster sauce, sweet soy sauce, chili paste, sugar, salt, and pepper to create the sauce. Set aside.

💡 Tip: Do not overcook the noodles; they should be al dente.
  2. 2

Heat 1 tablespoon of vegetable oil in a wok or large pan over medium-high heat. Add minced garlic and sauté until fragrant. Add sliced chicken and prawns, and stir-fry until cooked through.

  3. 3

Push the cooked meat and seafood to one side of the wok. Add the remaining 1 tablespoon of oil to the empty side. Add shredded cabbage, julienned carrots, and bean sprouts. Stir-fry the vegetables until slightly tender but still crisp.

  4. 4

Combine the meat, seafood, and vegetables. Push the mixture to the side and pour the beaten eggs into the empty space. Scramble the eggs until cooked, then mix them with the other ingredients.

  5. 5

Add the cooked egg noodles to the wok. Pour the prepared sauce over the noodles and toss everything together until well combined and heated through. Garnish with chopped spring onions and cilantro, and serve with lime wedges.

💡 Pro Tips

  • For a spicier dish, increase the amount of chili paste.
  • You can add other vegetables like green beans, bell peppers, or bok choy.
  • Ensure the wok is hot before adding ingredients for a proper stir-fry.

🔄 Variations

  • Use beef, tofu, or other proteins instead of chicken and prawns.
  • Add a fried egg on top for an extra layer of richness.
