Namibian Dried Fish and Bean Stew

- 800 g Canned chopped tomatoes
- 2 large Onions(chopped)

- 3 tbsp Vegetable oil
- 500 ml Fish or vegetable stock
- 1 tsp Paprika
- 1/2 tsp Cumin

Soak the dried fish in cold water for at least 12 hours, changing the water several times, or boil it in fresh water for 15-20 minutes to rehydrate and remove excess salt. Drain and flake the fish, removing any bones.

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onions and sautรฉ until softened and translucent, about 7-10 minutes.

Add the minced garlic and chopped bell pepper, and cook for another 5 minutes until the pepper begins to soften.

Stir in the paprika and cumin, and cook for 1 minute until fragrant.
