New Zealand Lamb and Kumara Koftas with Mint Yoghurt
Tender lamb koftas infused with the sweetness of kumara (sweet potato) and aromatic spices, served with a refreshing mint and yoghurt dipping sauce. This dish offers a unique New Zealand twist on a Middle Eastern classic, incorporating the popular kumara.

- 500 g Lamb mince(lean)
- 150 g Kumara (sweet potato)(peeled and grated)
- 1/2 medium Red onion(finely chopped)
- 2 cloves Garlic(minced)
- 1/4 cup Fresh mint(finely chopped)
- 1/4 cup Fresh coriander(finely chopped)
- 1 tsp Ground cumin
- 1 tsp Ground coriander
- 1 tsp Paprika
- 1 tsp Salt
- 1/2 tsp Black pepper
- 2 tbsp Olive oil(for cooking)
- 1 cup Greek-style yoghurt
- 2 tbsp Fresh mint(for yoghurt sauce, finely chopped)
- 1 clove Garlic(for yoghurt sauce, crushed)
- 1 tbsp Lemon juice(for yoghurt sauce)

In a large bowl, combine the lamb mince, grated kumara, chopped red onion, minced garlic, chopped fresh mint and coriander, ground cumin, ground coriander, paprika, salt, and pepper. Mix thoroughly with your hands until well combined.

Shape the mixture into small oval koftas, about 6-7 cm long. You should get approximately 16-20 koftas.

Heat the olive oil in a large frying pan or on a grill over medium-high heat. Cook the koftas in batches for about 8-10 minutes, turning occasionally, until browned and cooked through.

While the koftas are cooking, prepare the mint yoghurt sauce. In a small bowl, combine the Greek yoghurt, finely chopped fresh mint, crushed garlic, and lemon juice. Stir well and season with a pinch of salt and pepper to taste.
