Pancakes with Cottage Cheese and Herbs (Biezpiena Pankūkas ar Garšaugiem)
Savory Latvian pancakes made with a base of cottage cheese and flour, mixed with fresh herbs, and pan-fried until golden. A delightful appetizer or light meal.

🧂 Ingredients
- 250 g Cottage cheese(full fat, well-drained)
- 2 large Eggs
- 100 g All-purpose flour
- 2 tbsp Fresh dill(chopped)
- 2 tbsp Fresh parsley(chopped)
- 2 stalks Green onions(finely chopped)
- 0.5 tsp Salt
- 0.25 tsp Black pepper
- 2-3 tbsp Vegetable oil(for frying)
👨🍳 Instructions
- 1
In a medium bowl, mash the cottage cheese with a fork. Add the eggs and mix until well combined.
- 2
Stir in the flour, chopped dill, parsley, green onions, salt, and pepper. Mix until a thick batter forms. If the batter is too wet, add a little more flour, one tablespoon at a time.
- 3
Heat vegetable oil in a large skillet over medium heat.
- 4
Drop spoonfuls of the batter into the hot skillet, flattening them slightly with the back of the spoon to form small pancakes (about 2-3 inches in diameter).
- 5
Fry for 3-4 minutes per side, until golden brown and cooked through.
- 6
Remove pancakes from the skillet and drain on paper towels.
- 7
Serve warm, either on their own or with a side of sour cream or a dollop of plain yogurt.
💡 Pro Tips
- ✓Ensure the cottage cheese is well-drained to prevent the batter from becoming too watery.
- ✓Don't overcrowd the pan when frying; cook in batches if necessary.
- ✓Adjust the amount of herbs to your preference.
🔄 Variations
- Add a pinch of grated nutmeg for a subtle flavor enhancement.
- For a slightly richer pancake, use a mix of cottage cheese and ricotta.
