  • 2 medium Tomatoes(sliced)
  • 1 medium Onion(sliced)
  • 1 any color Bell pepper(sliced)
  • 1 medium Carrot(julienned)

  • 2 tbsp Lemon juice
  • 1 tbsp Coriander(chopped fresh)
  • 1 tsp Paprika
  • to taste Salt
  • to taste Black pepper
  • 1/2 tsp Chili flakes(optional)

👨‍🍳 Instructions

  1. 1

Preheat oven to 200°C (400°F). Lightly grease a baking dish.

  2. 2

Arrange the sliced tomatoes, onion, bell pepper, and julienned carrot in the baking dish.

  3. 3

In a small bowl, whisk together olive oil, lemon juice, minced garlic, chopped coriander, paprika, salt, black pepper, and chili flakes (if using).

  4. 4

Place the fish fillets on top of the vegetables. Brush the fish generously with the olive oil and lemon juice mixture.

  5. 5

Cover the baking dish with foil.

  6. 6

Bake for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork. Remove foil for the last 5 minutes of baking if you want the vegetables to brown slightly.

  7. 7

Garnish with extra fresh coriander before serving. Serve with rice or a side salad.

💡 Pro Tips

  • Ensure the vegetables are cut into relatively uniform sizes for even cooking.
  • Don't overcook the fish, as it can become dry.
  • Adjust the amount of chili flakes to your spice preference.

🔄 Variations

  • Add other vegetables like zucchini, mushrooms, or green beans.
  • Marinate the fish for 15-30 minutes before baking for deeper flavor.
  • Use a whole fish, such as sea bream, and adjust baking time accordingly.
