🧂 Ingredients

  • 2 medium Whole fish(e.g., sea bream or snapper, cleaned and scaled)
  • 300 g Potatoes(cut into wedges)
  • 2 medium Carrots(cut into chunks)
  • 1 large Bell pepper(any color, deseeded and chopped)
  • 1 large Onion(cut into wedges)
  • 3 cloves Garlic(sliced)
  • 4 tbsp Olive oil
  • 1 piece Lemon(sliced, plus extra for serving)
  • 2 tbsp Fresh parsley(chopped)
  • 1 tsp Dried oregano
  • to taste Salt
  • to taste Black pepper(freshly ground)

    Preheat oven to 200°C (400°F). Grease a large baking dish.

    In the baking dish, toss the potatoes, carrots, bell pepper, onion, and garlic with 2 tbsp of olive oil, salt, pepper, and dried oregano. Spread them in an even layer.

    Prepare the fish by rinsing them under cold water and patting dry. Make a few shallow slits on the sides of each fish.

    Rub the fish inside and out with salt and pepper. Place lemon slices and a few sprigs of parsley inside the cavity of each fish.

    Drizzle the remaining 2 tbsp of olive oil over the fish. Place the fish on top of the vegetables in the baking dish.

    Bake for 30-40 minutes, or until the fish is cooked through and flakes easily with a fork, and the vegetables are tender and slightly caramelized. Cooking time will vary depending on the size of the fish.

    Remove from oven, sprinkle with fresh chopped parsley, and serve immediately with extra lemon wedges.
