Peixe Assado no Forno com Legumes (Oven-Baked Fish with Vegetables)
A simple yet delicious dish of whole fish baked in the oven with a medley of colorful vegetables, seasoned with herbs and lemon.

🧂 Ingredients
- 2 medium Whole fish(e.g., sea bream or snapper, cleaned and scaled)
- 300 g Potatoes(cut into wedges)
- 2 medium Carrots(cut into chunks)
- 1 large Bell pepper(any color, deseeded and chopped)
- 1 large Onion(cut into wedges)
- 3 cloves Garlic(sliced)
- 4 tbsp Olive oil
- 1 piece Lemon(sliced, plus extra for serving)
- 2 tbsp Fresh parsley(chopped)
- 1 tsp Dried oregano

- to taste Black pepper(freshly ground)

Preheat oven to 200°C (400°F). Grease a large baking dish.

In the baking dish, toss the potatoes, carrots, bell pepper, onion, and garlic with 2 tbsp of olive oil, salt, pepper, and dried oregano. Spread them in an even layer.

Prepare the fish by rinsing them under cold water and patting dry. Make a few shallow slits on the sides of each fish.

Rub the fish inside and out with salt and pepper. Place lemon slices and a few sprigs of parsley inside the cavity of each fish.

Drizzle the remaining 2 tbsp of olive oil over the fish. Place the fish on top of the vegetables in the baking dish.

Bake for 30-40 minutes, or until the fish is cooked through and flakes easily with a fork, and the vegetables are tender and slightly caramelized. Cooking time will vary depending on the size of the fish.
