🧂 Ingredients

  • 1 kg Chicken(cut into pieces (thighs and drumsticks recommended))
  • 3 ripe Plantains(for frying)
  • 2 medium Onions(1 chopped, 1 sliced)
  • 2 mixed colors Bell peppers(sliced)
  • 2 medium Carrots(julienned)
  • 2 medium Tomatoes(chopped)
  • 5 cloves Garlic(minced)
  • 1 inch piece Ginger(grated)
  • 4 tbsp Soy sauce
  • 2 tbsp Oyster sauce
  • 150 ml Vegetable oil(for frying chicken and plantains)
  • 1 optional Stock cube
  • to taste Salt
  • 1 tsp Black pepper

    Season chicken pieces with salt, black pepper, and a pinch of stock cube if using. Let it marinate for at least 15 minutes.

    Heat about 100ml of vegetable oil in a large pan or wok over medium-high heat. Fry the chicken pieces until golden brown on all sides. Remove chicken and set aside.

    Peel and slice the plantains. Fry them in the remaining hot oil until golden brown. Remove and drain on paper towels. Set aside.
