  • 4 x 150g Reineta fillets(skin on or off)
  • 1 Zucchini(chopped)
  • 2 Bell peppers(mixed colors, chopped)
  • 1 Red onion(cut into wedges)
  • 200 g Cherry tomatoes
  • 4 Garlic cloves(sliced)
  • 1 Lemon(sliced, plus juice)
  • 4 tbsp Olive oil
  • 2 tbsp Fresh parsley(chopped)
  • 1 tsp Dried oregano
