  • 1 lb Oxtail or beef(cut into bite-sized pieces)
  • 1 piece Smoked fish (e.g., mackerel)(cleaned and flaked)
  • 2-3 medium Blue crabs(cleaned)
  • 1 large Onion(chopped)
  • 3 medium Tomatoes(diced)
  • 4 cloves Garlic(minced)
  • 1 tablespoon Ginger(grated)
  • 2-3 Habanero or Scotch Bonnet peppers(finely chopped, adjust to taste)
  • 2-3 medium Okra(sliced)
  • 2 cups Water or stock
  • to taste Salt
  • 2 Seasoning cubes
  • 1 teaspoon Ground crayfish (optional)
  • 1 teaspoon Shrimp powder (optional)
  • 2 tablespoons Red palm oil

    In a large pot, heat the red palm oil over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes.

    Add the minced garlic, grated ginger, and chopped habanero peppers. Cook for another 2-3 minutes until fragrant.

    Add the diced tomatoes and cook until they begin to soften, about 5 minutes.
