Slovak Potato Cake

- 1 kg Potatoes(peeled and boiled until tender)
- 3 large Eggs
- 200 g All-purpose flour
- 150 g Bryndza (Slovak sheep cheese)(or a mix of feta and cream cheese)
- 100 g Smoked bacon(diced)
- 1 medium Onion(finely chopped)
- 2 cloves Garlic(minced)
- 1 tsp Salt
- 0.5 tsp Black pepper
- 2 tbsp Butter or oil(for greasing and frying)

Preheat oven to 180°C (350°F). Grease a baking dish with butter or oil.

Mash the boiled potatoes until smooth. Let them cool slightly.

In a separate pan, fry the diced bacon until crispy. Remove bacon and set aside, leaving the rendered fat in the pan. Sauté the chopped onion and minced garlic in the bacon fat until softened.

In a large bowl, combine the mashed potatoes, eggs, flour, crumbled bryndza (or cheese mixture), sautéed onion and garlic, salt, and pepper. Mix well until a cohesive dough forms.
