Strapačky s Kyslou Kapustou a Hubami

- 150 g All-purpose flour(plus more for dusting)
- 400 g Sauerkraut(drained and roughly chopped)
- 250 g Mushrooms(sliced (e.g., champignons, oyster mushrooms))
- 1 medium Onion(chopped)
- 100 g Smoked bacon or sausage(diced (optional))
- 2 tbsp Butter or oil

Prepare the potato dough: Squeeze excess water from grated potatoes. Mix with flour and salt to form a firm dough. If too sticky, add more flour. Let rest for 10 minutes.

While water heats, cook bacon or sausage (if using) in a large skillet until crispy. Remove and set aside, leaving rendered fat in the pan.
