Soupou Gertö
Soupou Gertö is a hearty Guinean chicken stew featuring tender chicken pieces simmered with sweet potatoes, eggplant, and aromatic spices in a flavorful tomato-based sauce. It's a comforting and satisfying dish often served with rice.

🧂 Ingredients
- 1.5 kg Chicken(cut into pieces (thighs and breast recommended))
- 1.5 tbsp Lemon juice
- 1 tsp Salt(to taste)
- 0.5 tsp Black pepper(to taste)
- 1 tsp Chili powder
- 2 tbsp Vegetable oil
- 1 bunch Spring onions(roughly chopped)
- 2 medium Large onions(roughly chopped)
- 3 medium Fresh tomatoes(roughly chopped)
- 6 cloves Garlic cloves(minced)
- 3 tbsp Tomato paste
- 3 cubes Chicken stock cubes(crumbled)
- 1 lb Sweet potatoes(peeled and cubed)
- 2 medium Eggplants(peeled and cubed)
- 4 cups Water
- 3 leaves Bay leaves
- 1 optional Scotch bonnet pepper(whole, for heat)

In a bowl, combine the chicken pieces with lemon juice, salt, black pepper, and chili powder. Let marinate for at least 15 minutes, or longer for more flavor.

While the chicken marinates, place the spring onions, large onions, and garlic in a food processor. Add the chopped tomatoes, crumbled chicken stock cubes, 1/2 cup of water, salt, and pepper. Blend until smooth.

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the marinated chicken pieces on all sides. Remove the chicken and set aside.

Pour the blended onion-tomato mixture into the same pot. Simmer over medium heat for 10-15 minutes, stirring occasionally, until the sauce has thickened slightly.

Return the browned chicken to the pot. Add the remaining water, bay leaves, and the whole scotch bonnet pepper (if using). Bring to a boil, then reduce heat to low, cover, and simmer for 25 minutes.

Add the cubed sweet potatoes and eggplants to the pot. Stir to combine, cover, and continue to simmer for another 20-25 minutes, or until the vegetables are tender.

Remove the bay leaves and scotch bonnet pepper before serving. Adjust seasoning if necessary. Serve hot with white rice.
