Spicy Cucumber Salad
A refreshing and spicy salad made with 'cracked' mini cucumbers, which are sliced using a special technique and then gently smashed to absorb a flavorful dressing. The cucumbers are first salted to draw out moisture, then rinsed and mixed with soy sauce, garlic, rice vinegar, chili oil, and sesame.

- 6-8 Mini Cucumbers
- Salt(to taste or as shown (for brining))
- Soy Sauce(to taste or as shown)
- Minced Garlic(to taste or as shown)
- Rice Vinegar(to taste or as shown)
- Chili Oil(to taste or as shown)
- Sesame Oil(to taste or as shown)
- Sesame Seeds(to taste or as shown)

Place one mini cucumber lengthwise between two chopsticks to prevent cutting all the way through.

Make thin diagonal slices along one side of the cucumber, stopping at the chopsticks. Flip the cucumber over.

Make straight slices along the other side of the cucumber, creating a spiral-cut effect. Repeat this slicing technique for all remaining cucumbers.

Gently smash or 'crack' the spiral-cut cucumbers to open them up, which helps them absorb the dressing later.

Place the cracked cucumbers in a bowl and generously sprinkle with salt.

Let the cucumbers rest for 20 minutes to draw out excess moisture.

Rinse the cucumbers thoroughly under cold water to remove the salt, then pat them dry.

Add soy sauce, minced garlic, rice vinegar, chili oil, sesame oil, and sesame seeds to the bowl with the rinsed cucumbers.
