- 100 g Shrimp(peeled and deveined (optional))
- 1 medium Onion(finely chopped)
- 3 cloves Garlic(minced)
- 1/2 Red bell pepper(diced)
- 100 g Green beans(trimmed and chopped)
- 2 large Eggs(beaten)
- 4 tbsp Kecap manis (Indonesian sweet soy sauce)
- 1 tbsp Soy sauce
- 1-2 tsp Sambal oelek (chili paste)(or to taste)
- 3 tbsp Vegetable oil
- to taste Salt
- 1/2 tsp White pepper
- for garnish Fried shallots (optional)
- for garnish Cucumber slices (optional)
- for garnish Tomato slices (optional)
๐จโ๐ณ Instructions
- 1
Heat 1 tbsp of vegetable oil in a large wok or skillet over medium-high heat. Add the beaten eggs and scramble them. Remove from the skillet and set aside.
- 2
Add another 1 tbsp of vegetable oil to the skillet. Add the chopped onion and minced garlic and stir-fry until fragrant.
- 3
Add the chicken pieces and stir-fry until they are mostly cooked through. If using shrimp, add them now and cook until pink.
- 4
Add the diced red bell pepper and chopped green beans. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- 5
Push the ingredients to one side of the skillet. Add the remaining 1 tbsp of vegetable oil to the empty side. Add the cooked rice and break up any clumps.
๐ก Tip: Using day-old rice helps prevent the fried rice from becoming mushy. - 6
Add the kecap manis, soy sauce, sambal oelek, salt, and white pepper to the rice. Stir well to coat the rice evenly.
๐ก Tip: Adjust sambal oelek to your preferred spice level. - 7
Mix the rice with the chicken, shrimp, and vegetables. Stir-fry for another 5-7 minutes until the rice is heated through and slightly toasted.
- 8
Stir in the scrambled eggs. Mix well.
๐ก Tip: Ensure all ingredients are evenly distributed. - 9
Serve hot, garnished with fried shallots, cucumber slices, and tomato slices if desired.
๐ก Tip: A side of pickled vegetables (acar) is a traditional accompaniment.
๐ก Pro Tips
- โFor authentic flavor, use day-old rice. Freshly cooked rice can be too moist.
- โDon't overcrowd the pan; cook in batches if necessary.
- โAdjust the heat level by adding more or less sambal oelek.
