Sweet Potato Pudding - Saint Vincent and the Grenadines traditional dish

🧂 Ingredients

  • 1 kg Sweet potatoes(grated (about 1kg))
  • 500 ml Coconut milk
  • 200 g Brown sugar(adjust to taste)
  • 1 tsp Cinnamon
  • 0.5 tsp Nutmeg
  • 1 tsp Vanilla extract
  • 0.5 tsp Salt
  • 1 tbsp Butter(melted, for greasing the pan)

👨‍🍳 Instructions

  1. 1

Preheat your oven to 350°F (175°C). Grease a baking dish or pan with melted butter.

  2. 2

In a large bowl, combine the grated sweet potato, coconut milk, brown sugar, cinnamon, nutmeg, vanilla extract, and salt. Mix thoroughly until all ingredients are well incorporated.

  3. 3

Pour the mixture into the prepared baking dish. Ensure the mixture has enough liquid to cook properly; it should not be too dry.

  4. 4

Bake for approximately 1 hour, or until a skewer inserted into the center comes out clean and the pudding is set. The top should be golden brown.

  5. 5

Allow the pudding to cool slightly before serving. It can be served warm or at room temperature.

💡 Pro Tips

  • Ensure the sweet potato is grated finely for a smoother texture.
  • Adjust the sugar content based on your preference.
  • If the pudding seems too dry during baking, a little extra coconut milk or water can be added.
  • Baking in a pot over low heat (coal pot method) is also a traditional way to prepare this pudding.

🔄 Variations

  • Add grated carrots or pumpkin for extra flavor and color.
  • Incorporate a small amount of grated fresh ginger for a spicy kick.
  • Some recipes include a piece of tania (dasheen) or green plantain for added texture.
