  • 1.5 cups Brown lentils(rinsed and picked over)
  • 2 tbsp Olive oil
  • 1 large Yellow onion(diced)
  • 4 cloves Garlic(minced)
  • 2 medium Carrots(peeled and diced)
  • 2 medium Potatoes(peeled and cut into bite-sized pieces)
  • 6 cups Vegetable broth
  • 5 cups Fresh spinach(roughly chopped)
  • 1 tsp Cumin
  • 0.5 tsp Coriander
  • 1 tsp Salt(or to taste)
  • 0.5 tsp Black pepper(or to taste)
  • 0.5 cup Lemon juice(freshly squeezed)

    Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.

    Add the rinsed brown lentils, diced carrots, and diced potatoes to the pot. Stir to combine.
