- 2 lbs Lamb shoulder(trimmed and cut into 1-inch pieces)
- 6 tbsp Unsalted butter(divided)
- 1 tbsp Olive oil
- 1/3 cup Flour
- 3 tbsp Long grain white rice
- 4 cloves Garlic(finely chopped)
- 3 tbsp Dried oregano(finely chopped)

- 4 cups Plain yogurt
- 5 large Eggs
- 1/8 tsp Nutmeg(freshly grated)

In a large saucepan, melt 3 tbsp of butter with olive oil over medium-high heat. Season lamb with salt and pepper, then toss with 1/4 cup of flour. Cook the lamb, turning as needed, until browned, about 10-12 minutes.

Add rice, garlic, and 1/2 cup of water to the pan with the lamb. Bring to a boil, then reduce heat to medium-low, cover, and simmer until rice is just tender, about 15-20 minutes.
