Banana and Coconut Pudding
A simple and comforting Tongan dessert made by simmering ripe bananas in creamy coconut milk until tender and sweet. This dish highlights the natural sweetness of bananas and the richness of coconut.

๐ง Ingredients
- 4 large Ripe bananas(peeled and sliced)
- 400 ml Coconut milk(full-fat)
- 2 tbsp Sugar(or to taste, optional)
- 2 tbsp Shredded coconut(for garnish (optional))
๐จโ๐ณ Instructions
- 1
Peel the ripe bananas and slice them into thick rounds (about 1-inch thick).
- 2
In a saucepan, combine the sliced bananas and coconut milk. If using sugar, add it now.
- 3
Bring the mixture to a gentle boil over medium heat, then reduce the heat to low.
- 4
Simmer for about 15-20 minutes, stirring occasionally, until the bananas are very soft and have broken down slightly, and the coconut milk has thickened into a pudding-like consistency.
- 5
Taste and adjust sweetness if needed. The bananas should provide most of the sweetness.
- 6
Serve warm, garnished with shredded coconut if desired.
๐ก Pro Tips
- โUse very ripe bananas for maximum sweetness and a creamy texture.
