Trinidad Aloo Pie Filling
A flavorful and aromatic spiced potato filling, a key component for the popular Trinidadian Aloo Pie snack.

🧂 Ingredients
- 2 lbs Potatoes(peeled and cut into 1-inch cubes)
- 3 tbsp Vegetable oil
- 4 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 1 medium Onion(finely chopped)
- 2 tbsp Curry powder
- 1 tsp Cumin powder
- 1/2 tsp Turmeric powder
- 1 small Scotch bonnet pepper(finely chopped, seeds removed for less heat (optional))
- 1 cup Water(or as needed)
- to taste Salt
- 1/4 cup Fresh cilantro(chopped, for garnish)

Boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain well and set aside.

Heat vegetable oil in a large skillet or pot over medium heat. Add minced garlic, grated ginger, and chopped onion. Sauté until fragrant and onions are translucent, about 3-5 minutes.

Stir in the curry powder, cumin powder, and turmeric powder. Cook for 1 minute until fragrant, stirring constantly.

Add the boiled potatoes and chopped scotch bonnet pepper to the pot. Gently mash some of the potatoes with the back of your spoon to create a thicker consistency.

Pour in the water, season with salt, and bring to a simmer. Cook for about 5-7 minutes, or until the sauce has thickened to your desired consistency.
