Sweet Pandanus Leaf Dessert
A traditional sweet treat from Tuvalu, this dessert features tender pandanus leaves simmered in coconut cream and sugar, creating a unique, fragrant, and chewy confection.

- 15 leaves Pandanus leaves(fresh or frozen, thinly sliced)
- 400 ml Coconut milk(full fat)
- 1/2 cup Sugar(or to taste)

Wash the pandanus leaves thoroughly and cut them into very thin strips (about 1-2 mm wide).

Place the pandanus strips in a pot and add enough water to cover them. Bring to a boil and simmer for about 10-15 minutes, or until the leaves are softened and tender.

Drain the water from the pot, leaving the softened pandanus strips.

Add the coconut milk and sugar to the pot with the pandanus strips. Stir well to combine.

Place the pot over low heat. Stir the mixture constantly for about 10-15 minutes, or until the mixture thickens to a pudding-like consistency. Be careful not to scorch the bottom.

Pour the Fai Fai into a greased dish or individual serving bowls.

Refrigerate for at least 1 hour, or until set. Serve chilled.
