๐ง Ingredients
- 500 g All-purpose flour
- 250 ml Warm milk
- 7 g Active dry yeast
- 80 g Granulated sugar
- 2 large Eggs
- 50 g Unsalted butter, softened
- 1 tsp Salt
- 400 g Fresh or frozen cherries, pitted(if frozen, thaw and drain well)
- 2 tbsp Cornstarch
- 50 g Powdered sugar, for dusting
- For the syrup (optional):
- 50 ml Water
- 50 g Granulated sugar
๐จโ๐ณ Instructions
- 1
In a small bowl, combine warm milk, yeast, and a pinch of sugar. Let it sit for 5-10 minutes until foamy.
๐ก Tip: Ensure milk is warm, not hot, to activate the yeast. - 2
In a large bowl, whisk together flour, remaining sugar, and salt. Make a well in the center.
๐ก Tip: Sifting the flour can result in lighter buns. - 3
Add the foamy yeast mixture, eggs, and softened butter to the well. Mix until a shaggy dough forms.
โฑ๏ธ 5 minutes - 4
Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
โฑ๏ธ 10 minutes๐ก Tip: Dough should spring back when lightly poked. - 5
Place the dough in a greased bowl, cover, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
โฑ๏ธ 1.5 hours๐ก Tip: A slightly warm oven (turned off) is a good place for rising. - 6
While the dough rises, prepare the cherry filling. In a bowl, toss pitted cherries with cornstarch and 2 tablespoons of sugar. If using frozen cherries, ensure they are well-drained.
๐ก Tip: Cornstarch will help thicken the cherry juices. - 7
Once the dough has risen, punch it down and divide it into 12 equal portions. Shape each portion into a ball.
โฑ๏ธ 5 minutes - 8
Flatten each dough ball, place about 1-2 tablespoons of cherry filling in the center, and carefully seal the edges to form a bun. Place seam-side down on a baking sheet lined with parchment paper, leaving some space between them.
๐ก Tip: Ensure the buns are well sealed to prevent filling from leaking. - 9
Cover the buns and let them rest for another 20-30 minutes.
โฑ๏ธ 30 minutes - 10
Preheat oven to 180ยฐC (350ยฐF). Bake the pampushky for 18-20 minutes, or until golden brown.
โฑ๏ธ 20 minutes - 11
While the buns are baking, prepare the optional syrup by simmering water and sugar until dissolved.
โฑ๏ธ 5 minutes - 12
Once baked, brush the warm buns with the syrup (if using) and dust with powdered sugar before serving.
๐ก Tip: Serve warm for the best texture and flavor.
๐ก Pro Tips
- โUsing fresh, in-season cherries will yield the best flavor.
- โDon't overfill the buns to ensure they seal properly.
- โIf you don't have cherries, other berries like blueberries or raspberries can be used.
