Dorset Apple Cake
A moist and flavourful cake from Dorset, packed with apples and warm spices, often with a delightful crunchy sugar topping. It's a perfect accompaniment to a cup of tea.

- 150 g Unsalted butter(softened)
- 150 g Light brown sugar
- 100 ml Milk
- 2 large Large eggs(lightly beaten)
- 500 g Cooking apples(peeled, cored, and thinly sliced (e.g., Bramley, Granny Smith))
- 0.5 medium Lemon(juiced)
- 2 tbsp Demerara sugar(for topping)

Preheat the oven to 180ยฐC/350ยฐF/Gas Mark 4. Grease and line a 20cm round baking tin with baking parchment.

In a large bowl, whisk together the self-raising flour, baking powder, and cinnamon.
