Uzbek Green Pastry
Kuk-somsa is a delightful Uzbek pastry, particularly popular in the mountainous regions. It features a flaky dough filled with a savory mixture of fresh greens like spinach or cilantro, combined with onion and sometimes egg. This seasonal treat is typically enjoyed in the spring and is a lighter, vegetarian alternative to the more common meat-filled samsa.

- 3 cups All-purpose flour
- 0.75 cup Water(lukewarm)
- 1 tsp Salt
- 2 tbsp Vegetable oil(for dough, plus more for brushing)
- 400 g Spinach(fresh, finely chopped)
- 1 cup Cilantro(fresh, finely chopped)
- 1 medium Onion(finely chopped)
- 1 large Egg(beaten, for filling (optional))
- 0.5 tsp Black pepper
- 0.5 tsp Cumin
- 1 large Egg yolk(for egg wash)
- 1 tbsp Water(for egg wash)

For the dough: In a large bowl, combine flour and salt. Gradually add lukewarm water and vegetable oil, mixing until a cohesive dough forms. Knead on a lightly floured surface for 8-10 minutes until smooth and elastic. Cover with a damp cloth and let rest for 30 minutes.

For the filling: In a separate bowl, combine the chopped spinach, cilantro, chopped onion, beaten egg (if using), black pepper, and cumin. Mix well.

Divide the dough into 6 equal portions. Roll each portion into a thin circle, about 6-7 inches in diameter. Brush lightly with vegetable oil.

Place a generous portion of the green filling onto one half of each dough circle. Fold the other half over to create a semi-circle, and press the edges firmly to seal. You can crimp the edges with a fork for a decorative finish.

Preheat your oven to 375ยฐF (190ยฐC). Line a baking sheet with parchment paper.

Arrange the kuk-somsa on the prepared baking sheet. In a small bowl, whisk together the egg yolk and tablespoon of water for the egg wash. Brush the tops of the somsas with the egg wash.
