- 1 cup Fresh parsley(finely chopped)
- 1 cup Fresh cilantro(finely chopped)
- 1 cup Fresh dill(finely chopped)

- 1 tablespoon All-purpose flour
- 1 teaspoon Turmeric powder

- 0.25 teaspoon Black pepper(or to taste)
- 2 tablespoons Olive oil(for cooking)
- 2 tablespoons Dried barberries(optional, rinsed)
- 2 tablespoons Chopped walnuts(optional)

Wash and thoroughly dry all the fresh herbs. Finely chop the parsley, cilantro, dill, and green onions. If using, rinse the barberries and chop the walnuts.

In a large bowl, whisk the eggs until well combined. Add the flour, turmeric, salt, and pepper. Whisk again until smooth.

Add the chopped herbs (and optional barberries and walnuts) to the egg mixture. Stir gently until everything is evenly distributed.

Heat the olive oil in a non-stick skillet (about 10-12 inches in diameter) over medium heat. Once the oil is hot, pour the herb and egg mixture into the skillet. Use a spatula to spread the mixture evenly.

Alternatively, you can cover the skillet and cook on low heat until the top is set, or finish it in a preheated oven at 350°F (175°C) for about 10-15 minutes.
