- 1 pound Sweet potatoes(peeled and cut into 1-inch cubes)
- 1 medium Onion(finely chopped)
- 3 cloves Garlic(minced)
- 1 can (14.5 oz) Tomatoes(diced, undrained)
- 1 medium Bell pepper(any color, finely chopped)
- 2 tbsp Vegetable oil or coconut oil
- 4 cups Water or vegetable broth
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground, or to taste)
- 1 leaf Bay leaf
- 1 small Optional: Chili pepper(minced, for heat)

In a large pot or Dutch oven, heat the oil over medium heat. Add the chopped onion and bell pepper and sautรฉ until softened, about 5-7 minutes.
