- 1 can (13.5 oz) Unsweetened coconut milk
- 1 can (16 oz) Diced tomatoes(with liquid)
- 0.5 cup Chicken broth
- 6 strands Saffron threads(bloomed in 2 tsp warm water)
- 1 tablespoon Brown sugar
- 1 tablespoon Lime juice
- 1 teaspoon Ground coriander
- 1 teaspoon Curry powder
- Salt(to taste)
- Black pepper(to taste)

Season the chicken thighs with salt and pepper. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Brown the chicken thighs on all sides until golden. Remove chicken and set aside.

Add the chopped onions to the same pan and cook until lightly browned, about 5-7 minutes. Add the grated ginger, minced garlic, and chopped chilies (if using) and cook for another minute until fragrant.
