Arroz de Gamba com Legumes
A fragrant rice dish featuring succulent shrimp and a colorful assortment of vegetables, seasoned with local spices, offering a lighter yet flavorful taste of Guinea-Bissau.

🧂 Ingredients
- 300 g Rice(long-grain, such as basmati or jasmine)
- 300 g Shrimp(peeled and deveined)
- 1 medium Onion(finely chopped)
- 3 cloves Garlic(minced)
- 1 medium Bell pepper(any color, diced)
- 1 medium Carrot(diced)
- 100 g Peas(fresh or frozen)
- 200 g Tomatoes(chopped)
- 600 ml Vegetable broth or water
- 2 tbsp Olive oil
- 1 tsp Curry powder
- 0.5 tsp Turmeric powder
- to taste Salt
- to taste Black pepper
- a small bunch Fresh parsley(chopped, for garnish)

Rinse the rice under cold water until the water runs clear. Drain well.

Heat olive oil in a large pot or deep skillet over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.

Add the minced garlic, diced bell pepper, and diced carrot. Cook for another 5-7 minutes until vegetables are slightly tender.

Stir in the curry powder and turmeric powder, cooking for 1 minute until fragrant.

Add the chopped tomatoes and cook for 2-3 minutes until they begin to break down.

Add the rinsed rice to the pot and stir to coat it with the vegetable and spice mixture. Cook for 1-2 minutes.

Pour in the vegetable broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until most of the liquid is absorbed and the rice is almost cooked.

Add the shrimp and peas to the pot. Stir gently, cover, and continue to cook for another 5-7 minutes, or until the shrimp are pink and cooked through and the peas are tender.

Season with salt and black pepper to taste. Fluff the rice with a fork.
