🧂 Ingredients

  • 300 g Rice(long-grain, such as basmati or jasmine)
  • 300 g Shrimp(peeled and deveined)
  • 1 medium Onion(finely chopped)
  • 3 cloves Garlic(minced)
  • 1 medium Bell pepper(any color, diced)
  • 1 medium Carrot(diced)
  • 100 g Peas(fresh or frozen)
  • 200 g Tomatoes(chopped)
  • 600 ml Vegetable broth or water
  • 2 tbsp Olive oil
  • 1 tsp Curry powder
  • 0.5 tsp Turmeric powder
  • to taste Salt
  • to taste Black pepper
  • a small bunch Fresh parsley(chopped, for garnish)

👨‍🍳 Instructions

  1. 1

Rinse the rice under cold water until the water runs clear. Drain well.

  2. 2

Heat olive oil in a large pot or deep skillet over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.

  3. 3

Add the minced garlic, diced bell pepper, and diced carrot. Cook for another 5-7 minutes until vegetables are slightly tender.

  4. 4

Stir in the curry powder and turmeric powder, cooking for 1 minute until fragrant.

  5. 5

Add the chopped tomatoes and cook for 2-3 minutes until they begin to break down.

  6. 6

Add the rinsed rice to the pot and stir to coat it with the vegetable and spice mixture. Cook for 1-2 minutes.

  7. 7

Pour in the vegetable broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes, or until most of the liquid is absorbed and the rice is almost cooked.

  8. 8

Add the shrimp and peas to the pot. Stir gently, cover, and continue to cook for another 5-7 minutes, or until the shrimp are pink and cooked through and the peas are tender.

  9. 9

Season with salt and black pepper to taste. Fluff the rice with a fork.

  10. 10

Garnish with chopped fresh parsley and serve hot.

💡 Pro Tips

  • Do not overcook the shrimp, as they can become tough.
  • If using frozen peas, add them in the last few minutes of cooking.
  • For extra flavor, you can add a bay leaf while the rice is simmering.

🔄 Variations

  • Add other vegetables like zucchini, green beans, or corn.
  • Use chicken or firm white fish instead of shrimp.
