- 1/4 cup Fresh parsley(chopped)

Wash the zucchini, trim the ends, and cut them in half lengthwise. Carefully hollow out the centers with a spoon, leaving about a 1/2 cm thick wall. Chop the removed zucchini flesh and set aside.

In a bowl, combine the ground beef, rinsed short-grain rice, chopped onion, minced garlic, chopped parsley, salt, pepper, and paprika. Mix well until all ingredients are evenly distributed.

Gently stuff each zucchini half with the meat and rice mixture, filling them generously.

In a large pot or oven-safe dish, heat the vegetable oil over medium heat. Add the reserved chopped zucchini flesh and sauté for 2-3 minutes.
