Botswana Lamb and Bean Stew

- 1 large Onion(chopped)
- 400 g Tomatoes(canned diced tomatoes)
- 3 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 3 tbsp Vegetable oil
- 750 ml Beef broth
- 1 tbsp Curry powder
- 1 tsp Cumin
- 1 tsp Coriander powder

- 1 Bay leaf

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the lamb cubes on all sides. Remove lamb and set aside.

Add chopped onion to the pot and cook until softened, about 5-7 minutes. Add minced garlic and grated ginger, cooking for another minute until fragrant.

Stir in curry powder, cumin, and coriander powder. Cook for 1 minute, stirring constantly, until fragrant.

Return the lamb to the pot. Add diced tomatoes, beef broth, bay leaf, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour.

Add the soaked and drained beans to the stew. Stir well, cover, and continue to simmer for another 30-45 minutes, or until the lamb is very tender and the beans are cooked through.
