Bulgarian Baked Rice with Vegetables

- 1 large Bell peppers(diced (any color))
- 1 medium Zucchini(diced)
- 2 medium Tomatoes(diced)
- 1 medium Onion(chopped)
- 3 cloves Garlic(minced)
- 750 ml Vegetable broth
- 3 tbsp Olive oil
- 1 tsp Dried mint
- 1 tsp Dried savory (chubritsa)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground)
- 2 tbsp Fresh parsley(chopped, for garnish)

Preheat oven to 190ยฐC (375ยฐF). Grease a medium-sized baking dish.

Heat olive oil in a large skillet or pot over medium heat. Add chopped onion and sautรฉ until softened, about 5 minutes.

Add diced carrots and bell peppers to the skillet. Cook for another 5-7 minutes until slightly tender.

Stir in the diced zucchini, tomatoes, minced garlic, dried mint, savory, salt, and pepper. Cook for 2-3 minutes until fragrant.
