  • 1 cup Coconut milk
  • 4 cups Water or vegetable broth
  • 1 stalk Lemongrass(bottom 4 inches, bruised and roughly chopped)
  • 1 inch piece Galangal(peeled and thinly sliced)
  • 0.5 teaspoon Turmeric(ground (or 1/2 inch fresh root, peeled and sliced))
  • 2 cloves Garlic(minced)
  • 3 leaves Kaffir lime leaves(torn)
  • 2 tablespoons Roasted rice powder(for thickening (see instructions))
  • 2 tablespoons Fish sauce(or to taste)
  • 1 tablespoon Palm sugar or brown sugar(or to taste)
  • 1 teaspoon Salt(or to taste)
  • 1 tablespoon Vegetable oil
