Dominica Breadfruit and Saltfish Stew

- 1 lb Saltfish (dried and salted cod)(rinsed and soaked overnight, then boiled and flaked)
- 1 medium Breadfruit(peeled, cored, and cut into 1-inch chunks)
- 1 medium Onion(chopped)
- 1 medium Bell pepper(chopped (any color))
- 3 cloves Garlic(minced)
- 2 medium Tomatoes(chopped)
- 2 sprigs Thyme
- 2 stalks Scallions(chopped)
- 1 whole Scotch Bonnet Pepper(pierced (optional, for flavor))
- 1 cup Coconut milk(full fat)
- 2 cups Water or fish stock
- 2 tbsp Vegetable oil

Rinse the saltfish thoroughly. Place in a bowl and cover with water. Soak overnight, changing the water a few times. Alternatively, boil the saltfish in several changes of water for about 30 minutes until desalted. Drain, cool, and flake into bite-sized pieces.

Peel, core, and cut the breadfruit into 1-inch chunks. You can parboil the breadfruit for about 10-15 minutes to speed up cooking in the stew.

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion, bell pepper, and minced garlic. Sautรฉ until softened, about 5-7 minutes.

Add the chopped tomatoes, thyme sprigs, chopped scallions, and the whole scotch bonnet pepper (if using). Cook for another 5 minutes until tomatoes start to break down.
