Kalakukko
Traditional Rye Fish Pie
A traditional Finnish dish, Kalakukko is a large, oval-shaped rye bread loaf baked with a filling of fish (typically perch or vendace) and pork fat. It's a hearty and portable meal, originating from the Savonia region.

๐ง Ingredients
- 800 g Rye flour
- 200 g All-purpose flour
- 2 tsp Salt
- 400-500 ml Water(lukewarm)
- 500 g Vendace or perch fillets(cleaned and deboned)
- 200 g Pork belly or fatty bacon(cut into small pieces)
- 1 tsp Salt(for filling)
- 0.5 tsp Black pepper(for filling)
๐จโ๐ณ Instructions
- 1
For the dough: Mix rye flour, all-purpose flour, and salt in a large bowl. Gradually add lukewarm water, mixing until a stiff dough forms. Knead for about 10 minutes until smooth. Cover and let rest for at least 30 minutes.
- 2
For the filling: Season the fish fillets and pork pieces with salt and pepper.
- 3
Roll out the dough on a lightly floured surface into a large oval or rectangular shape, about 1-1.5 cm thick.
- 4
Layer the fish fillets and pork pieces in the center of the dough, leaving a border of about 5-7 cm around the edges.
- 5
Fold the dough edges over the filling, pressing firmly to seal and create a loaf shape. Ensure there are no gaps for the filling to leak out.
- 6
Place the Kalakukko seam-side down on a baking sheet lined with parchment paper. You can also wrap it in foil for the initial baking to keep it moist.
- 7
Bake in a preheated oven at 150ยฐC (300ยฐF) for 4-6 hours. The long, slow cooking time is crucial for the bread to cook through and the filling to become tender.
- 8
If wrapped in foil, remove it for the last 30-60 minutes of baking to allow the crust to brown.
- 9
Let the Kalakukko cool completely before slicing. It can be eaten warm or cold.
