Konkoé
Konkoé is a traditional Guinean stew featuring smoked catfish simmered with a variety of vegetables like eggplant, potatoes, carrots, and onions in a flavorful, slightly soupy sauce. It's a comforting dish often served with rice.

🧂 Ingredients
- 400 g Smoked catfish(cleaned, head and bones removed, cut into pieces)
- 2 medium Potatoes(peeled and quartered)
- 1 medium Eggplants(cubed)
- 1 medium Carrots(peeled and sliced)
- 1 large Onion(chopped)
- 2 cloves Garlic cloves(minced)
- 2 fresh Tomatoes(crushed or pureed)
- 1 tbsp Tomato paste
- 3 optional Chili peppers(whole or chopped, for heat)
- 100 ml Vegetable oil
- 1 liter Water
- 2 cubes Stock cubes(crumbled)
- 1 tsp Salt(to taste)
- 0.5 tsp Black pepper(to taste)

Clean the smoked catfish by removing heads and bones. Cut into pieces and wash thoroughly in warm water.

Peel and mince the garlic and onion. Peel and chop the potatoes and carrots. Cube the eggplant.

In a bowl, combine the crushed tomatoes, tomato paste, minced onion, minced garlic, salt, and pepper. Mix well.

Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the catfish pieces and sauté for about 5 minutes until lightly browned.

Add the tomato-spice mixture to the pot with the fish. Stir well and simmer over low heat for 10 minutes.

Add the chopped potatoes, eggplant, carrots, water, crumbled stock cubes, and chili peppers (if using). Stir to combine.

Bring the stew to a boil, then reduce heat, cover, and simmer for 25-30 minutes, or until the vegetables are tender and the sauce has slightly thickened.
