🧂 Ingredients

  • 500 g Basmati rice(High quality, long-grain Basmati rice is recommended for best results.)
  • 500 g Chicken thighs or breast(Boneless, skinless thighs are more forgiving and flavorful, but breast can be used.)
  • 400 g Plain whole milk yogurt(Full-fat yogurt provides richness and helps create the crispy crust.)
  • 3 Egg yolks(Ensure eggs are fresh.)
  • 1 tsp Saffron threads(High-quality saffron threads, ground and bloomed in 2 tbsp hot water for at least 15 minutes.)
  • 50 g Barberries (Zereshk)(Rinsed and picked over to remove any stems or debris. Can be sautéed briefly with a little butter and sugar if desired.)
  • 1 medium Onion(Finely chopped.)
  • 1 tsp Turmeric
  • to taste Salt
  • to taste Black pepper
  • 2-3 tbsp Butter or Ghee(For greasing the pan and potentially sautéing barberries.)
  • as needed Water

💡 Pro Tips

  • For an extra crispy bottom crust, ensure the pan is well-greased with butter or ghee before adding the rice mixture.
  • Saffron is crucial for the authentic flavor and color of Tahchin. Use good quality saffron threads.
  • The key to a successful Tahchin is the balance of flavors and textures – the crispy rice crust, the tender chicken, and the fragrant saffron.
  • To unmold without breaking, ensure the tahchin has rested sufficiently. A non-stick pan or a springform pan can also be helpful.
  • This dish is often served as a main course and is a stunning centerpiece for special occasions.
